Cabernet Sauvignon 60% – Syrah 40%

Vinification: Cabernet Sauvignon is harvested the second week of September and Syrah at the end of the month. Hand harvesting is followed by desteming, skin contact for five days at 12°C. Fermentation – maceration for at least twenty days. Separation of the young wine without pressure. Malolactic fermentation. Maturation in French oak wood for twelve months. Bottling. Bottle aging for six months.

Winemaker’s notes:
Deep purple. Aromas of mint, eucalyptus, red and black fruits. Velvety mouth and balanced finish.

Serving suggestions:
Best served at 15 – 17˚C, it is an ideal accompaniment to fish and shellfish with red sauce, red meat, pasta, cheese and cold cuts.
